Chef Ashley Christensen—who later won James Beard Awards in 2014 and 2019—revived this downtown space, preserving its nostalgic “double-horseshoe” bar and retro-chrome accents while infusing a polished, modern vibe. The diner blends Southern comfort with a dash of sophistication, offering dishes like short rib pot pie alongside decadent staples such as macaroni au gratin.

Poole’s charm lies in its refined take on comfort cuisine. The ever-present macaroni au gratin, made with Jarlsberg, Grana Padano, and sharp white Cheddar, features a caramelized broiled crust that diners adore—and which sold over 15,000 plates in 2022 alone. Seasonal, scratch-made offerings—like roast chicken and potato salad—rotate weekly or even daily, with chalkboard menus guiding guests through the latest available specialties.

Inclusive, Community‑First Ambiance
